Have you ever had such an experience where you never felt the value of the things you had in your hands? It wasn't until you lost access to them that you regretted it. Today, I want to share a dietary experience I had while studying in the UK.

This experience completely changed my perception of the kitchen.

 

 

The Lost Stage: When the Kitchen Becomes Unreachable

In order to obtain the ACCA (Chartered Accountants of England and Wales) certificate, I traveled to the UK and, through an agency, arranged to stay in a two-story house near the school.

The originally shared living room was transformed into a bedroom, and the kitchen became the only public space.

When I first arrived in a new environment, confronted with cultural differences and the busy academic schedule, I was actually too scared to use that shared kitchen.

For several consecutive months, I relied on takeout food to get by.

Every time I ate the monotonous meals, I would think of that spacious and bright kitchen in my home country, which I had never cherished.

The lack of nutritious nourishment made me lose weight all of a sudden.

 

Back on the Stage: A Gauntlet of Taste and Weight 

During my first vacation, I couldn't wait to fly back to my country.

For a whole week, I was completely immersed in the joy of cooking - purchasing fresh ingredients, experimenting with various dishes, and fully enjoying the satisfaction of cooking.

The result was astonishing: in just seven days, my weight increased by 5-6 pounds!I

clearly remember when I first returned to my country, my sister said the first thing to me was: "You've lost so much weight!" I was secretly delighted.

For me, who is obsessed with my weight, this was undoubtedly a heavy blow. But it also made me confused: We have always been saying that eating less staple foods, which have a high content of carbohydrates, is likely to cause obesity.

But I ate high-calorie hamburgers every day in the UK and I lost weight; after returning to my country, I hardly touched staple foods like bread and rice, yet my weight rebounded unexpectedly?

Finally, I understand: Compared to the obvious staple foods, the astonishing "oils and fats" hidden in those so-called "healthy" stir-fries are the real culprits that ruin one's figure.

The change in my weight has made me "miss" those days in England when I had "hamburger buns"!

 

The Upgrade of the Stage - From Smoke and Odors to Healthy Presentation

This experience made me start to thoroughly reflect on my eating habits.

I decided to bid farewell to the traditional Chinese cooking style of "rich oil and strong sauce", and embark on a healthier diet pattern that is more suitable for modern life. 

Another important reason for this change was that long-term computer work had made my eyes extremely sensitive.

Every time I cooked, the cooking fumes would make me cry uncontrollably.

After a medical examination, the doctor diagnosed that I might have "dry eye syndrome".

To alleviate the symptoms more conveniently, I gave up the cumbersome hot towels and chose the more convenient steam eye mask

I began to favor the culinary philosophy of Japanese cuisine - simplicity, less oil, and emphasis on preserving the original flavor and nutrients of the ingredients:

  • Steaming and boiling instead of stir-frying to maximize the retention of nutrients in the ingredients;
  • Choosing deep-sea fish and soy products to supplement high-quality protein;
  • Slow cooking at low temperatures to reduce the production of harmful substances.
